Now, for everyone else, try these cupcakes! They are divine! They are great year round but even more perfect at this time of the year. I was introduced to this recipe at a funeral years ago. I often volunteered to help serve the funeral dinners at my church. One woman would always bring this pumpkin cake. It was so delicious and was the first dessert to disappear. I broke down and asked her for the recipe and was surprised at how easy it is!
My kids were eating the icing with a spoon. (I didn't tell them there was cream cheese in it.) It goes perfectly with many other cakes and desserts too.
Pumpkin Cake
2 C sugar
2 C flour
2 C pumpkin
2 t baking soda
½ t salt
2 t baking powder
2 t cinnamon
1 C oil
4 eggs
Mix all ingredients well. Pour into a greased 9” x 13” pan. Bake at 350º for 35-45 minutes. (I baked my cupcakes for approximately 20 minutes.)
Cream Cheese Frosting
Cream together 1 lb. powdered sugar, 8 oz. cream cheese, 1 stick butter, and 2 t vanilla.

oooohhhh....I have pumpkin in the fridge and have been wondering what to do with it! I just need cream cheese for the frosting!
Ok, I'm going to try to make them with almond and soy flour and Truvia. Hopefully I can make something that is close to these.

I totally do not understand why commenting works differently for some people than others! Are you typing the http://? As you can see, I have to type in my name too but I get a link. I'm going to try something different...let me know how it works.
