This was by far the best taco I've ever eaten in my life! I made the tortilla from scratch, thanks to Grace & Gusto! (I highly recommend trying out her recipe!) The lettuce is from my garden and I used my own salsa (I'm out of fresh garden tomatoes. Tear.) Yes, there's fattening sour cream and lots of cheese on there but that's one of the reasons it was so stinkin' good!
I am a little ashamed to admit that I'm going to be having the leftover taco for lunch today. (Besides, the vegetable soup has made me so gassy lately! TMI.)
That's all. I just wanted to brag about my awesome dinner and confess that I'm not doing as well on my diet as you think I am.

Actually, I couldn't have the tortilla (sad as that is)but that taco is pretty healthy. The tortilla probably doesn't have more than 15 carbs. The sour cream and cheese are packed with calcium the beef has a lot of protein and you have vegetables in it. If you ate just one, you'd be OK. You just don't want to eat three or four.
